1. Specified skills and purpose of the exam
The revised Immigration and Refugee Recognition Act, which began on April 1, 2019, has created a new status of residence called "Specified Skills".
"Specified skills" is a system that accepts people with specialized skills from abroad for jobs that are lacking in people working in Japan, such as the food and beverage manufacturing industry.
In order to obtain the status of residence of Specified Skill No. 1 in the food service industry manufacturing industry, you must pass both the "skill level" and the "Japanese language ability level".
The "Japanese Language Proficiency Level" is determined by the "Japanese Language Proficiency Test (JFT-Basuc)" conducted by the Japan Foundation or the "Japanese Language Proficiency Test (JLPT)" conducted by the Japan Foundation and the Japan International Education Support Association.
The "skill level" in the food service industry is determined by the "Food and Drink Manufacturing Specified Skill (i) Skill Measurement Test" conducted by the Foreign Food Industry Skills Evaluation Organization (hereinafter referred to as OTAFF). (OTAFF may abbreviate the test name if necessary.)
Please contact the Immigration Bureau of Japan, Ministry of Justice, to apply for certification of status of residence for specified skills. OTAFF cannot answer other than the specific skill No. 1 skill measurement test in the food service industry and food and beverage manufacturing industry.
2. Eligibility to take the exam
Those who can take a test for a specific skill in the food service industry in Japan are those who meet both a and b on the day of the test.
a．Persons who have a status of residence (Note 1) and are at least 17 years old on the examination day.
b．Have a passport (Note 2) issued by a foreign government or a competent authority in the region specified by the Minister of Justice in order to cooperate in the smooth execution of the deportation order.
(Note 1) Those who are resident in Japan in compliance with Japanese law can take the examination. Even if you do not have a residence card, you can take the exam even if you are staying in Japan for a short period of time in compliance with the law. People who are in Japan (illegal residents) who do not comply with Japanese law cannot take the exam.
(Note 2) Currently, those who have passports of foreign governments / regions other than the Islamic Republic of Iran can take the examination.
(Please note)
■Even if you pass this test, you do not necessarily get the status of residence of "Specified Skills".
Even if you pass the examination and apply for the issuance of a certificate of residence status or change of status of residence, it does not mean that you will always receive a certificate of status of residence.
■Even if you receive a certificate of status of residence, the Ministry of Foreign Affairs will examine your visa application separately, so it does not mean that you will always receive a visa.
■In Japan, there are rules regarding the entry of foreigners so that the infection of the new coronavirus does not spread. Please be sure to check the homepage below to see if you can enter Japan to take the exam.

3.Exam subjects, implementation methods, etc.
(All exam questions are written in Japanese (Kanji with ruby).)
Exam subjects: 2 subjects, a departmental test and a practical test Exam time: 80 minutes

（１）Departmental test
This is a test of Japanese proficiency required for work and knowledge of hygiene management, food and drink cooking and customer service in general.

The "judgment test" is a test to see which is the correct action by looking at figures and illustrations, and the "planning" is a test to see if a work plan can be made using a calculation formula.

Note 1: The Organization for Technical Skill Assessment of Foreign Workers in Food Industry commissions Prometric Japan Co., Ltd to conduct the test overseas for FY2020.
Note 2: For other countries, the test will be conducted in order from countries that have prepared the test environment after consultations between governments.
